I hope you are enjoying the New Year! I’m still writing 2018 though LOL. If you’ve been following me on Instagram , then you know I received an Instant Pot for Christmas from my husband. I’ve been going back and forth for three years, trying to tell myself if I really needed this thing.
I’ve been using it pretty much every day and now I don’t know what I ever did without it! Now, I still cook with my iron skillets and dutch ovens. I decided to go with the Instant Pot so I could make a few things at home in a more timely manner.
One thing I grew up with that I enjoy cooking several times a week are green beans. As simple as they are, they have to really be cooked well, you know what I mean?
If they don’t have butter and bacon in them, they just aren’t as tasty. I only use real butter, like Kerry Gold or Vital Farms. My goal is to make my own. Don’t you love having goals. I also love using fresh green beans when I’m growing them in season or frozen from the store.
This recipe is so simple and tastes delicious in the Instant Pot. The colors are so vibrant and the flavors just meld together. This is the Instant Pot I have. I love it!
Southern Style Green Beans
2-3 Tbsp. of real butter
Uncured Bacon (use however much you like, it’s bacon!)
¼ cup of chopped onion
Pink Himalayan Salt (to taste)
Fresh cracked pepper (to taste)
1 lb. of fresh green beans
1 cup of homemade chicken broth
1. Place butter, bacon and onion in the Instant Pot and select the “Saute” setting. Cook until bacon is cooked.
2. Add the broth and green beans. Next add salt and pepper, then stir.
3. Put lid on and select the “Steam” setting. Close the lid and make sure it’s set to natural pressure.
4. Let beans cook for 30 minutes and make sure the “Warm” setting is on.
5. Once the pressure has been released, the beans are done.
What do you serve with green beans? Usually, I fix a roast or chicken and then a salad or mashed potatoes and my skillet cornbread.
