Skillet Corn Bread

With Thanksgiving less than two weeks away, it’s time to start planning your side dishes.

Do you have a dish that reminds you of back when you were little? Mine is my maw maw’s Iron skillet Cornbread. In West Virginia, cornbread pretty much goes with anything lol, so we had it at least once or twice a week when I was a kid.

Something I’ve Always Wanted to Do

There is just something about hand-forged iron.  I mean anything that’s made from it just makes me think of civil war era.  I absolutely love anything that’s been hand-forged.  Well, I have to tell you, I was so excited when I found this cute little store, Em’z Outdoor Store on one of my country rides going to St. Augustine.  It really is a cute store.  They sell gorgeous plants, offer amazing classes and have a barn that’s a store inside.  You have to check them out!

Ok, back to Blacksmithing.  I’m not sure if that’s a word, but that is what I was doing a few weeks ago.  I learned how to Blacksmith.  I’m still blown away that I made this cute hook.  I even twisted the iron all by myself, along with the help of the instructor LOL.  No, but seriously, I made this hook and learned so much.  I want to do it again!

They are supposed to be holding a class on how to make a knife and I am so there.  Now that my family saw what I made, they all want to come next time with me LOL.

A Little Faith

There is just something about biting into a fresh picked veggie, isn’t there?

At first, when my friend Dara mentioned a new gardening method, I felt a little like “No way I can grow veggies without water”.  I watched the 2 hour video on the Back to Eden website and just absorbed all the info that I could.  Have you heard of it?  I decided to change my method to the BTE (Back to Eden) this Spring.  What better way to honor God than through the garden.  After all, that’s where it all started, right?

Just five days ago, this little cucumber was this size below.  Isn’t is amazing how we take a seed and it grows!

I’m so excited about my new garden this year.  I do not have irrigation installed.  In fact, we don’t even have a well installed yet at our new property.  I only use water on the really hot days which fortunately, hasn’t been too many so far.  When I do water, I take my 2 gallon sprayer container and go back to our shop ( about five acres away) and fill it up.

So, here is the new method I am using.  I have to say, there are not pests at all.  I NEVER use pest control as my garden is all heirloom seeds from Baker Creek Seeds.

The above photo is where it all starts.  I lay newspaper or cardboard down and then add a layer of manure on top of that.

I then add about 8-10 inches of wood chips.  The wood chips help retain all the moisture hence the no need for much watering.

Then, goes the rows filled with manure again.  Once the plants start growing, then I will spread the chips on top of the roots.

I truly am so amazed at how gorgeous all of my veggies are growing.  I had the faith that God would provide and he has indeed!  Above is Basil that I planted all from seed.  I will split the basil up here in just a little bit so it doesn’t get so top heavy.  A future goal of mine is to grow herbs in pots and sell them and maybe a possible veggie stand in the future . 🙂

Produce, Preserve, and Prepare Your Harvest

 

 

So, what have you been preserving lately?

Do you grind your own flour?

Have you hopped on the Homesteading Wagon yet?

I love going from Farm to Table, but I really enjoying preserving my harvest!  Right now, I have all kinds of stuff growing in my garden.  Everything should be ready for pickin’ in the next month or so!  It’s FALL here in Florida. 🙂

I can’t wait to start making some of my garlic dill pickles!  My vines are growing quite nicely so it won’t be long now!  My friend Hope and I bought this ridiculous amount of mason jars a few years ago from a lady for $60.  I think I had a total at one time of 250.  I have them organized in my garage and whenever we get free time then we will get to canning.  There’s a huge variety of regular, wide mouth, wired, pint, quart, lids, etc.  We were blessed when we found these!

 

The one thing I do have my eye on for this year’s purchase is a food mill.  Do you have one already?  I’ve got my eye on this one right here….

A friend of mine has one and if you have never tasted fresh ground flour, well, then you are missing out!  It literally took us 1 minute to grind the flour.  Crazy!

I can’t wait to get mine so I can start grinding my own.  The whole Gluten-Free epidemic is so bad because all of the commercial flour is tainted with chemicals during their process.  My grandpa made bread all the time and I don’t ever remembering either of my grandparents having food allergies.

If you have a mill already, which one do you have?  Is it manual crank or electric?  How often do you use it?

Bacon Anyone?

Who doesn’t like Bacon?  I absolutely LOVE Bacon!  I mean, I could probably eat it every day of the week, but……

Besides eating it, I love to cook and season other foods with it, like green beans, black eyed peas or fresh zipper peas.

I really can’t afford to go to the store every time I need bacon.  I use a lot of it, remember? 😉

I love going to Trader Joe’s and stocking up on their “Ends and Pieces” Bacon.  It’s perfect for all the cooking that requires bacon grease and well, just the flavoring!  I only buy uncured bacon, without the nitrites and if I can’t find any at TJ’s, then I buy Applegate.

This is really affordable ($2-3) and now that I have a TJ’s near me, I go a couple times a month and stock up!

When I get home, I pull out anywhere from 5-6 sandwich zip lock bags and I divide all the bacon among the bags.  What’s cool about this bacon is that it’s already chopped and cut up for you, making it perfect for cooking a pot of beans!

I then seal them up and stick them in the freezer.  So, every time I need bacon for cooking, I just get in the freezer and pull a bag out.  It’s no mess and the perfect amount pre-measured!
